OUR STORY



The brand name Äng Kusina® was finally materialized in 1988 and eventually became the trademark of our modern door-dash-like “binalot” business. Its maiden voyage started in the year 1944 as a carinderia. It was a sari-sari store with wooden benches near the roadside. The store was owned by my grandmother. Little by little, my father, whose job at that time was delivering bread from house to house on a horse-driven rig known as caritela, extended the store to the side of the house and build a small "turo-turo" eatery.

As the story went, the carinderia basically served meals with fried eggs, fried rice and/or bread (the three basic food staples of the common tao), and a cup of coffee on the side. Over time, customers started requesting add-ons like tapa, longanisa, tuyo, barbeque, and tocino to their meals. Gradually, the add-ons became an instant hit with our paroquianos and were now known then as the Seven Classic Silogs®.

In order to make ordering more quick and easy, my dad first named his basic recipe as Silog, a blend word for Sinangag(rice) and Itlog(egg). Then, from the basic catch-tag, he simply combined other adds-on with the word silog, like for examples, Tapsilog for tapa, sinangag, and itlog; Longsilog for longanisa, sinangag, and itlog; and Tocsilog for tocino, sinangag, and itlog. 

On top of these, he also coined the word Tikalog for tinapay, kape, and itlog. Soon, Silogs became a buzzword and spread among residents all over the barrios and subsequently jumped from town to town. People from all walks of life figuratively came in line to experience the "Silog Phenomena". The Evolution of the Silogs emerged and by some providential time dilation, in due course, Äng Kusina ng Silog® or the House of Silog® was born.

In 1988, the whole family, who were all now in the United States, relived what my grandmother started. In her honor and inspired by her sacrifices and hard-works, the family vowed to rekindle the eatery by naming it Äng Kusina®.  The brand name was formed in resemblance to my grandmother's food stall, aka Äng Kusina®, which I imitated thereafter. 

The word Silog was dropped because the family ventured now to all sorts of food fusions. As the House of Silogs® expanded over the years, its menu expanded as well - from its classic Silogs to other traditional Filipino dishes, and from the pleasant savory flavors of sweet, sour, and salty to the fifth element of taste known as umami. Nowadays, its menu is made out of hundreds of adds-on paired with the basic "silogs". Although more restaurants imitated our wide arrays of silogs, our restaurant will always be known as 'The House where Silogs Originated'.
